Chocolate Cobbler....no eggs required!

One of my favorite sites online is Southern Plate. Christy does an amazing job of digging up old Southern style recipes that were basically buried with our Great Grandmothers, because like all good cooks they didn't write the recipes down. I can't tell you how many of Christy's recipes I have used over the last few months and not been disappointed yet.

Tonight I made Chocolate Cobbler. That's right Chocolate Cobbler! Oh how to describe the incredibly delicious, gooey, pudding, cake concoction? I think that pretty much says it!

Do you see all the gooey goodness on the bottom left? Yeah that's just a peak at what's inside!

Chocolate Cobbler from Southern Plate
1 C self Rising Flour
3/4 C sugar
2 T Cocoa
1/2 C Milk
1 tsp Vanilla
2 T Vegetable Oil
3/4 C Brown Sugar
1/4 C Cocoa
1 3/4 C hot tap water
1 C chopped pecans (optional)
Mix together flour, sugar, and cocoa. Add milk, vanilla, oil, and nuts (if using). Mix well. Pour into greased 8×8 inch pan. Mix 3/4 C brown sugar and 1/4 C cocoa together. Sprinkle over batter. Pour, very slowly, hot tap water over dry mixture and batter. Bake in 350 oven for forty to forty five minutes.
